Tequila Lime Pork Tenderloin

Marinated tequila-lime pork tenderloin, grilled until tender. Recipe yields two; freeze one for later.
Ingredients:
  • 1 cup fresh lime juice
  • 0.5 cup tequila
  • 0.5 cup orange juice
  • 0.25 cup chopped fresh cilantro
  • 2 tablespoons chopped green chiles
  • 1.5 tablespoons chili powder
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 0.75 teaspoon ground black pepper
  • 2 (1 1/2 pound) pork tenderloins
Instructions:
  • Combine lime juice, tequila, orange juice, cilantro, chiles, chili powder, honey, garlic, salt, and pepper in a bowl. Transfer the marinade to a 1-gallon resealable bag. Add pork tenderloins, coat evenly, remove excess air, and seal. Refrigerate and marinate for 8 hours.
  • Preheat your outdoor grill to high heat and lightly oil the grate before cooking.
  • Remove the tenderloins from the marinade, gently shake off any excess, and discard the rest of the marinade.
  • Grill tenderloins until they reach an internal temperature of 145°F (63°C), turning occasionally, for about 20 minutes.
