Tequila Lime Roasted Turkey Breast

Spiced roasted turkey breast with a kick of tequila, jalapeño, and chili.
Ingredients:
  • 2 teaspoons salt
  • 1 bone-in whole turkey breast (5 to 7 lb), thawed if frozen
  • 3 cloves garlic
  • 1 jalapeño chile, cut in half, seeded
  • 3 teaspoons chili powder
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 6 tablespoons gold tequila
  • 6 tablespoons lime juice
  • 1/4 cup orange juice
  • 1/4 cup chicken broth
  • 1 lime, cut into wedges
Instructions:
  • Preheat the oven to 325°F and position the turkey breast, skin side up, in a shallow roasting pan.
  • Place garlic and jalapeño in a mini food processor. Process until finely chopped. Add chili powder, salt, pepper, oil, 2 tablespoons of tequila, and 2 tablespoons of lime juice. Process until smooth using on-and-off pulses.
  • Gently separate turkey skin with fingers or a spoon, then generously massage garlic mixture under and on top of the skin. Place an ovenproof meat thermometer in the breast's thickest part, ensuring it doesn't touch the bone.
  • Combine the orange juice, broth, and remaining tequila and lime juice in a roasting pan.
  • Roast the turkey uncovered in the oven until the thermometer reads 165°F, which will take about 2 to 2 1/2 hours. Transfer the turkey to a warm platter, cover it with foil, and let it rest for 15 minutes before carving. Drizzle the pan juices over the turkey and garnish with lime wedges.
