Elevate couscous to a fruity breakfast delight.
Ingredients:
  • 250ml apple juice
  • 28.60 gm honey
  • 190g couscous
  • 75g packet flaked almonds
  • 2 freestone peaches, halved, chopped
  • 90g sultana
  • 2 green apples
  • Greek Style Yoghurt, to serve
Instructions:
  • In a saucepan, combine apple juice and honey and bring to a boil. Pour the juice mixture over couscous in a heatproof bowl, stir well, and let it sit for 5 minutes to absorb the liquid. Fluff the couscous with a fork to separate the grains.
  • Preheat your oven to 180°C. Toast the almonds on a baking tray for 5 minutes until fragrant. Let them cool. Mix the almonds, peaches, and sultanas into the couscous.
  • Hand-grate the apples into chunky pieces and mix them into the couscous until well combined.
  • Top with a dollop of yogurt before serving.
