Ingredients:
  • 140g (2/3 cup) couscous
  • 65g (1/3 cup) sultanas
  • 310ml (1 1/4 cups) boiling water
  • 40.00 ml pine nuts
  • 25g butter
  • 60ml (1/4 cup) honey
  • 2 valencia oranges, peeled, segmented
Instructions:
  • In a bowl, combine couscous and sultanas. Stir in boiling water while using a fork. Cover and let sit for 5 minutes until liquid is absorbed and sultanas are plump. Fluff with a fork to separate the grains.
  • 1. Preheat a non-stick frying pan over medium heat, then toast pine nuts by stirring constantly for 2 minutes until golden brown. Remove and place in a small bowl.
  • In the same pan, melt the butter over medium heat until it foams. Stir in the couscous mixture and honey, cooking for 1-2 minutes until heated through. Transfer to serving plates, top with orange segments, and sprinkle with toasted pine nuts before serving.
