Orange chicken with green bean and mint couscous

Tangy citrus chicken with sweet honey and currants.
Ingredients:
  • 190g (1 cup) couscous
  • 200ml boiling water
  • 200g green round beans, trimmed, cut into 3cm lengths
  • 125.00 ml fresh mint leaves, torn
  • 1 orange
  • Olive oil spray
  • 2 (about 200g) chicken breast fillets, cut into 2.5cm pieces
  • 1 red onion, cut into thin wedges
  • 1 tsp finely grated fresh ginger
  • 42.00 gm fresh lemon juice
  • 28.60 gm honey
  • 20.00 ml currants
Instructions:
  • In a large heatproof bowl, combine couscous and water. Cover with plastic wrap and let sit for 4 minutes. Fluff the grains with a fork.
  • Boil beans in water until bright green and tender crisp (1-2 minutes). Refresh in cold water, then drain. Mix beans and mint into couscous.
  • Zest half of the orange and then juice it.
  • Begin by heating a large non-stick frying pan over high heat and spraying with oil. Cook half of the chicken for 3-4 minutes until just cooked, then transfer to a plate. Repeat with the remaining chicken. Spray the pan again with oil and add the onion and ginger, cooking for 3-4 minutes until the onion is golden.
  • Combine orange rind, orange juice, chicken, lemon juice, honey, and currants in the pan. Stir well and cook for 2 minutes until slightly thickened.
  • Portion the fluffy couscous generously into individual serving dishes before elegantly topping it with the flavorful chicken mixture.
