Ingredients:
  • Natural yoghurt, to serve
  • 200g couscous
  • 50g prune
  • 115g honey
  • 1.25 gm ground cinnamon, plus extra to dust
  • 1/2 paw paw or papaya, peeled, sliced
  • 1/2 pineapple, peeled, cored, thinly sliced
  • 1 orange, peeled, flesh segmented
  • Slivered unsalted pistachios, to garnish
Instructions:
  • Combine couscous and prunes in a big bowl. Mix honey and cinnamon with 1 1/2 cups (375ml) boiling water. Pour over the couscous, cover, and let sit for 5 minutes to absorb the liquid.
  • Separate the couscous grains with a fork and distribute evenly among 4 bowls. Add slices of paw paw or papaya, pineapple, and orange segments to each bowl. Drizzle with yogurt, sprinkle with pistachios, and finish with a dusting of cinnamon before serving.
