Buttery couscous with sweet raisins and crunchy pine nuts.
Ingredients:
  • 25g butter
  • 1 bunch fresh continental parsley
  • 60ml (1/4 cup) olive oil
  • 1 brown onion, halved, thinly sliced
  • 2.40 gm sea salt
  • 95g (1/2 cup) raisins
  • 55g (1/3 cup) pine nuts
  • 1L (4 cups) chicken style liquid stock
  • 480g (2 1/2 cups) couscous
Instructions:
  • Separate the parsley leaves from the stalks, saving the leaves. Dispose of half of the stalks. Finely chop the rest of the stalks and set aside.
  • In a large deep frying pan over medium heat, heat oil and butter until foamy. Cook onion and salt, stirring occasionally, for 12 minutes until golden. Then add raisins, pine nuts, and reserved parsley stalks, and cook for 3 more minutes until pine nuts are golden.
  • Pour in rich, flavorful stock and bring to a boil. Gently stir in fluffy couscous. Remove from heat, cover, and let it rest for 10 minutes until all the liquid is absorbed. Fluff up the grains with a fork.
  • Transfer the flavorful couscous mixture to a bowl, allowing it to cool down. Gently fold in the vibrant parsley leaves to enhance the fresh and aromatic flavors.
