Best-ever yellow rice recipe

Fragrant spiced rice infused with vegetable broth, topped with cilantro, pine nuts, and golden raisins. Ideal for pairing with any barbecue.
Ingredients:
  • 400g (2 cups) white long grain rice
  • 750ml (3 cups) Vegetable Liquid Stock
  • 2.50 gm mild curry powder
  • ¼ tsp ground turmeric
  • 80g salted butter, chopped
  • 100g (⅔ cup) slivered almonds
  • 90g (½ cup) sultanas
  • ¼ cup finely chopped parsley
Instructions:
  • In a medium saucepan, bring together rice, stock, curry powder, and turmeric over medium-high heat until boiling. Simmer covered for 10-12 minutes until rice is tender and liquid is absorbed. Let it stand covered for 5 minutes, then fluff the rice mixture with a fork.
  • In a small frying pan over medium heat, melt half of the butter. Add almonds and cook, stirring occasionally, until golden, about 3-4 minutes.
  • Mix in the almonds, butter, sultanas, and parsley with the warm rice. Serve at warm temperature or room temperature.
