Best Ever Split Pea Soup

Delicious split pea soup made with yellow and green split peas, hearty and comforting even without ham.
Ingredients:
  • 1 tablespoon olive oil
  • 2 cups chopped onion
  • 2 cups chopped carrot
  • 2 cups finely chopped celery
  • 1.5 teaspoons minced garlic
  • 1 cup yellow split peas
  • 1 cup green split peas
  • 8 cups fat-free chicken broth
  • 1.5 teaspoons salt-free seasoning blend (such as Mrs. Dash®)
  • 1 teaspoon salt
Instructions:
  • In a Dutch oven, heat oil over medium heat. Sauté onion, carrot, celery, and garlic until onion is translucent, about 5 to 7 minutes. Add broth, split peas, and seasoning blend. Cover and bring to a boil. Reduce heat and simmer, stirring occasionally, until peas are tender, around 2 1/2 hours. Blend using an immersion blender and enjoy your dish.
