Spanish-style Swiss chard stir-fry with pine nuts and raisins is a delicious and vibrant side dish.
Ingredients:
  • 2 pounds Swiss chard, stemmed and chopped
  • 2 tablespoons extra virgin olive oil
  • 4 ounces raisins
  • 2 ounces pine nuts
  • salt and ground black pepper to taste
Instructions:
  • Place a steamer insert in a saucepan with water below it. Bring to a boil. Steam chard until tender, about 2-3 minutes. Drain and set aside.
  • In a large skillet over medium heat, sizzle raisins and pine nuts in hot oil until pine nuts are golden, around 5 minutes. Stir in chard, season with salt and pepper, and cook while stirring until chard is hot, about 2 minutes.
