Satisfying Spanish-style chicken salad with olives and beans.
Ingredients:
  • 500g Australian Chicken Tenderloins
  • 5.00 gm smoked paprika
  • 280g jar Chargrilled Vegetablesdrained reserving
  • 60ml marinade
  • 400g can cannellini beans, rinsed, drained
  • 230g pitted mixed olives, drained
  • 60g baby spinach leaves
  • 1 tsp minced garlic
  • 20.00 ml chopped oregano
Instructions:
  • Preheat a barbecue grill or chargrill to medium heat. Toss chicken with paprika and 1 tablespoon of the reserved vegetable marinade in a large bowl. Grill chicken for 3 minutes on each side until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm.
  • Combine the beans, chargrilled vegetables, olives, and spinach in a medium bowl, toss gently to mix well, and then transfer to a serving dish. In a small bowl, mix together the garlic, oregano, and the remaining marinade.
  • Place the chicken on top of the salad in the dish and generously drizzle with the flavorful oregano mixture before serving.
