Quick and easy gourmet meal with simple ingredients, ready in just 30 minutes.
Ingredients:
  • 1 lemon, zested and juiced
  • 1 tsp ground coriander
  • 2 pork fillets (750g total), trimmed
  • 1 onion, finely chopped
  • 250g baby spinach leaves
  • 55g raisins
  • 40.00 ml toasted pine nuts (see note)
Instructions:
  • Preheat your oven to 200C and prepare a baking tray with parchment paper.
  • Mix together the lemon zest, coriander, sea salt, and freshly ground black pepper. Cut the pork fillets in half to create 4 shorter pieces and season with the zest mixture.
  • In a large non-stick pan over medium-high heat, heat 2 teaspoons of oil. Brown the pork for 1-2 minutes on each side. Then, transfer to a tray and bake for 10-12 minutes until cooked through.
  • Next, pour the rest of the oil into the frying pan and set the heat to medium-low. Sauté the onion and garlic for 8 minutes until they are soft and golden. Lower the heat, toss in the spinach, raisins, and a splash of lemon juice. Season well and cook for 2-3 minutes, stirring occasionally until the spinach is wilted. Mix in the pine nuts, then take the pan off the heat.
  • After slicing the pork, serve it alongside the spinach and generously drizzle with the flavorful pan juices.
