Prepare this make-ahead breakfast dish for an impressive brunch that will wow your guests.
Ingredients:
  • 500g smooth ricotta
  • 1 tsp vanilla bean paste
  • 80ml maple syrup
  • 6 (about 1kg) ripe yellow nectarines, halved, stoned
  • 1/2 baguette, thickly sliced diagonally, toasted
  • mint leaves, to serve
Instructions:
  • Mix together the ricotta, vanilla, and 2 tablespoons of maple syrup in a bowl.
  • Preheat oven to 180°C. Arrange nectarines, cut-side up, in a roasting pan. Drizzle with remaining maple syrup. Roast for 25-30 minutes until tender. Allow to cool slightly before serving.
  • Lay out the baguette slices on plates, generously spread with the ricotta mixture, top with nectarine slices, and finish with a sprinkling of fresh mint before serving.
