Avocado, mango and walnut salad

Ingredients:
  • 3 bacon rashers
  • 1 mignonette lettuce (cos lettuce leaves)
  • 2 mangoes
  • 2 avocados
  • 57.50 gm walnut halves
  • 56.88 gm olive oil
  • 42.00 gm lemon juice
  • 5.90 gm French mustard
  • 20.20 gm thickened cream
Instructions:
  • Prepare the bacon by removing the rind and roughly chopping it. Cook the bacon in a lightly oiled pan until it turns crisp. Then, allow it to cool on absorbent paper.
  • Prepare the fresh lettuce by washing and gently drying the leaves before placing them in a beautiful serving bowl.
  • Peel and slice the mangoes and avocados, then lay them over the lettuce. Sprinkle with chopped bacon and walnut halves. Cover with plastic wrap but keep at room temperature to enjoy the best flavors.
  • Combine all ingredients in a small bowl and whisk until smooth.
  • Drizzle the dressing over the salad right before serving.
