Try this tantalizing sweet mango and avocado salsa as a delightful complement to Cajun-spiced lamb.
Ingredients:
  • 12 (about 750g) lamb cutlets, excess fat trimmed
  • 20.00 gm Cajun seasoning (see recipe above)
  • Mixed salad leaves, to serve
  • 1 just-ripe mango, cheeks removed, peeled, finely chopped
  • 1 avocado, halved, stone removed, peeled, finely chopped
  • 1/2 red onion, finely chopped
  • 1 long fresh red chilli, halved, deseeded, finely chopped
  • 40.00 ml finely chopped fresh coriander
  • 21.00 gm fresh lime juice
Instructions:
  • Place the cutlets in a glass dish. Mix Cajun seasoning and oil in a bowl, then drizzle over the cutlets, ensuring they are coated. Cover with plastic wrap and let sit for 10 minutes to enhance the flavors.
  • Prepare the mango & avocado salsa by mixing together the mango, avocado, onion, chili, coriander, and lime juice in a bowl.
  • Preheat a non-stick frying pan over medium-high heat. Season cutlets with salt and pepper, then cook for 2 minutes on each side for a perfect medium or until preferred doneness. Transfer to a plate, cover with foil, and let rest for 5 minutes before serving.
  • Place the cutlets on serving plates and generously top them with the flavorful salsa. Accompany them with a vibrant mix of salad leaves for a fresh and delightful meal.
