Cajun lamb kebabs

Delicious grilled lamb skewers on pita with flavorful mint yogurt dressing - irresistible!
Ingredients:
  • 600g lamb leg steaks, cut into 2cm pieces
  • 10.00 gm cajun seasoning (see note)
  • olive oil cooking spray
  • 200g Greek Style Yoghurt
  • 40.00 ml chopped fresh mint leaves
  • 4 wholemeal pita breads
  • 75g baby rocket
  • lemon wedges, to serve
Instructions:
  • In a bowl, combine lamb with seasoning and toss to coat evenly. Thread lamb onto skewers. Preheat a barbecue plate or chargrill and spray with oil. Grill skewers for 4 to 5 minutes on each side for a medium cook or until done to your preference. Transfer to a plate, cover to keep warm, and enjoy.
  • Combine yoghurt, fresh mint, zesty lemon juice, and a sprinkle of salt and pepper in a bowl, stirring well.
  • Grill pita breads until golden brown, then plate them. Add rocket, kebabs, and a dollop of yogurt on top. Serve with lemon wedges on the side.
