Indulge in spicy Cajun lamb cutlets with crispy slaw and charred sweet corn.
Ingredients:
  • 4 cobs corn, husks and silks removed
  • 10.00 gm Cajun seasoning
  • 12 Lamb Cutlets
  • 400g American Coleslaw Kit
  • 25g parmesan
  • 2.50 gm smoked paprika
  • 20g butter, chopped
Instructions:
  • Preheat a barbecue grill or chargrill on high. Grill the corn, turning occasionally, for 10 minutes or until nicely charred and tender.
  • In a shallow glass or ceramic dish, mix oil and Cajun seasoning. Add lamb and toss until coated. Grill lamb for 3 minutes on each side or to your preferred doneness. Place on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Prepare the coleslaw as instructed on the packet.
  • In a bowl, mix the parmesan and paprika. Spread butter on the corn and sprinkle with the parmesan mixture. Season to taste.
  • Plate the lamb, corn, and coleslaw separately on individual serving plates.
