Spicy cutlets: perfect for a sophisticated party.
Ingredients:
  • 12 (750g total) lamb cutlets, trimmed
  • 4.80 gm garlic salt
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • 5.00 gm sweet paprika
  • 1/2 tsp cayenne pepper
  • 250.00 ml dried panko breadcrumbs
  • 62.50 ml plain flour
  • 1 egg
  • Vegetable oil, for shallow frying
  • Lemon wedges, to serve
Instructions:
  • Gently press down on the meat cutlets to flatten using your hand. In a shallow dish, mix together garlic salt, onion powder, oregano, paprika, cayenne pepper, and breadcrumbs. Season with pepper. Spread flour on a large plate. Whisk an egg in a shallow bowl.
  • Coat each cutlet in flour, ensuring to shake off any excess. Dip in egg, then coat in breadcrumb mixture. Place on a plate and cover with plastic wrap. Chill in the refrigerator for 20 minutes.
  • Heat a generous amount of oil in a large frying pan over medium heat until shimmering. Cook cutlets in batches for 3 minutes on each side for medium doneness or to your liking. Place on a paper towel-lined plate to absorb excess oil. Arrange on a platter and garnish with lemon wedges before serving.
