Whip up a quick and nutritious meal for hectic evenings.
Ingredients:
  • 400g packet dry coleslaw mix
  • 125.00 ml reduced-fat plain yoghurt
  • 1 garlic clove, crushed
  • 12 (50g each) lamb cutlets, trimmed
  • 15.00 gm cajun seasoning
  • Olive oil cooking spray
Instructions:
  • In a bowl, combine coleslaw mix, yoghurt, garlic, 2 tablespoons cold water, and season with pepper. Mix well until evenly combined.
  • Lay the cutlets on a platter. Season both sides generously. Coat a spacious frying pan with oil spray and heat over high flame. Sear cutlets for 2 minutes per side for medium doneness or to your preference. Accompany with coleslaw.
