Elevate pizza with a cauliflower crust, topped with flavorful spiced beef for a delicious twist.
Ingredients:
  • 950g cauliflower
  • 125.00 ml finely grated parmesan
  • 62.50 ml pizza sauce
  • 500g extra-lean beef mince
  • 13.80 gm extra virgin olive oil
  • 6.25 gm ground cumin
  • 82.50 ml reduced-fat plain Greek-style yoghurt
  • 24.00 gm tahini
  • 1/2 small red onion, halved, very thinly sliced
  • 125.00 ml fresh mint leaves
  • 62.50 ml fresh dill
  • Pinch sumac, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 220C/200C fan-forced. Grease and line two large baking trays with baking paper.
  • Place cauliflower in a food processor and chop finely. Microwave the chopped cauliflower in a covered bowl for 5 minutes until tender. Let it cool, then squeeze out excess liquid. Mix cauliflower with parmesan, egg, salt, and pepper until combined. Divide mixture into 4 portions and shape into ovals on baking trays. Spread pizza sauce over each oval, leaving a border.
  • In a medium bowl, mix mince, oil, cumin, and garlic. Season with salt and pepper. Spread beef mixture evenly over cauliflower bases, breaking into small pieces. Bake pizzas for 20 minutes until golden and cooked through.
  • In a small bowl, mix together yoghurt and tahini. Season with salt and pepper. Spread the yoghurt mixture on top of the pizzas, then add onion and herbs. Sprinkle with sumac and serve with lemon wedges.
