Crispy cauliflower pizza with almonds

Delicious crispy cauliflower and almond medley - perfect as a side, light lunch or tasty snack.
Ingredients:
  • 500g cauliflower
  • 25.00 gm almond meal
  • 1 egg white, lightly beaten
  • 1/2 tsp garlic powder
  • 125.00 ml grated tasty cheese
  • 1 1/2 tsp chopped fresh thyme leaves
  • 40.00 ml natural sliced almonds
  • 1/2 tsp finely grated lemon rind
  • 40.00 ml finely grated parmesan (see notes)
Instructions:
  • Roughly chop the cauliflower and pulse in a food processor until finely chopped (3 cups total). Transfer to a microwave-safe bowl, cover loosely with plastic wrap, and microwave on HIGH for 5 minutes or until tender.
  • Place the cauliflower in a muslin-lined sieve over a bowl or jug. Wrap the muslin tightly to squeeze out excess liquid. Discard the liquid.
  • Preheat your oven to 220C/200C fan-forced and line a large baking tray with baking paper.
  • In a bowl, mix cauliflower, almond meal, egg white, garlic powder, tasty cheese, and 1 teaspoon thyme. Season generously with salt and pepper. Combine well. Spread mixture onto a prepared tray, shaping it into a 12cm x 32cm rectangle. Bake for 20 minutes until golden and slightly firm to touch.
  • In a bowl, mix together sliced almonds, lemon rind, parmesan, and the rest of the thyme. Season with salt and pepper. Sprinkle the mixture over cauliflower. Bake for 5 to 6 minutes until golden brown and edges are crispy. Let it rest for 10 minutes, then cut into 8 slices and serve.
