Indian pizza with curried cauliflower and green chilli

Savor this delicious Indian-inspired naan pizza.
Ingredients:
  • 5.00 gm mild curry powder
  • 1 tsp ground turmeric
  • 36.40 gm olive oil or mustard seed oil
  • 1 small cauliflower, cut into florets
  • 4 naan breads
  • 80ml passata
  • 2 x 250g mozzarella balls, drained, sliced (see Notes)
  • 1/2 red onion, thinly sliced
  • 1 long green chilli, thinly sliced
  • Mint leaves, to serve
Instructions:
  • Preheat the oven to 200C. Line two baking trays with parchment paper. Mix curry powder, turmeric, 1 tablespoon of oil, and 1 teaspoon of salt in a bowl. Add cauliflower and toss until well coated. Spread the cauliflower on the trays and bake for 25 minutes until beautifully golden and lightly charred.
  • Coat each naan with 1 tablespoon of passata and layer with mozzarella, cauliflower, onion, and chili. Drizzle with the remaining 1 tablespoon of oil. Bake for 15 minutes until the bread is crisp and the mozzarella is melted. Serve sprinkled with mint leaves.
