Elevate your pizza with naan, goat cheese, curry, and tandoori chicken for a delicious Indian fusion.
Ingredients:
  • 0.5 cup tandoori paste
  • 6 tablespoons plain yogurt
  • 2 skinless, boneless chicken breast halves
  • 6 tablespoons olive oil, divided
  • 4 pieces tandoori naan bread
  • 3 teaspoons spicy curry powder
  • 1 teaspoon ground turmeric
  • 1 yellow bell pepper, thinly sliced
  • 1 large red onion, thinly sliced
  • 4 (4 ounce) spreadable goat cheese
  • 1 tomato, thinly sliced
  • 4 ounces feta cheese
Instructions:
  • Combine tandoori paste and yogurt in a large glass or ceramic bowl. Add chicken and mix well to coat. Cover with plastic wrap and marinate in the refrigerator for 8 hours or overnight.
  • Preheat oven to a piping hot 400 degrees F (200 degrees C).
  • In a large skillet over medium-high heat, warm 1 tablespoon of olive oil. Pat the chicken dry, discard the marinade, and sear the chicken breasts until cooked through, 10 to 12 minutes. Ensure the internal temperature reaches 165°F (74°C). Remove and shred the chicken using two forks.
  • Coat the naan with a drizzle of olive oil and a dusting of curry powder before placing them on a baking sheet.
  • Place the naan in the preheated oven and bake until golden brown and aromatic, approximately 5 minutes.
  • In a skillet over medium-high heat, sauté yellow pepper and onion in 1/4 cup of olive oil until vegetables soften, about 5-7 minutes. Mix in 2 teaspoons of curry powder and turmeric while stirring.
  • Spread a generous layer of creamy goat cheese onto the naan. Next, add a sprinkle of fragrant curry powder. Layer on the shredded chicken, colorful pepper mixture, fresh tomato slices, and tangy feta cheese. Finish with a final touch of curry powder for an extra boost of flavor.
  • Bake until feta becomes soft, approximately 20 minutes in the oven.
