Cozy up with Indian-inspired pizzas for a relaxing evening.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 (about 400g) eggplant, cut into 1cm pieces
  • 8 fresh curry leaves (see note) (optional)
  • 300g lamb mince
  • 110g tomato kasundi
  • 4 naan breads
  • 2 tomatoes, seeds removed, chopped
  • 140g yoghurt
  • 1/2 cucumber, coarsely grated
  • Juice of 1/2 lemon
  • 40.00 ml chopped coriander
Instructions:
  • Preheat your oven to 200°C.
  • Warm oil in a frypan over medium heat. Sauté onion and garlic for 3-4 minutes until softened. Add eggplant and curry leaves, cook for 6-7 minutes until slightly golden. Incorporate lamb mince, cook for 5-6 minutes until browned, breaking up any lumps. Mix in kasundi and season to taste.
  • Add the naan to a baking tray, layer on the flavorful lamb mixture, then sprinkle with tomato. Bake for 6-8 minutes until warmed through with crispy edges.
  • Combine yoghurt, cucumber, juice, and 1 tablespoon coriander in a small bowl. Season to taste. Spread the yoghurt mixture on the pizzas and sprinkle with the remaining 1 tablespoon coriander. Cut into slices and serve.
