Indian-style curried lamb shanks

Tender lamb shanks in flavorful Rogan Josh curry sauce.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 large onion, chopped
  • 175.00 gm Pataks Rogan-Josh Curry Paste
  • 400g can tomatoes, diced
  • 250.00 ml Real Stock Beef
  • 6 lamb shanks
  • Coriander leaves, to serve
  • Yoghurt, to serve
Instructions:
  • Preheat the oven to 160°C (140°C fan). In a large flameproof casserole dish, heat oil over high heat, and brown the shanks in two batches. Set the shanks aside. Cook the onion in the same dish over medium heat for 10 minutes until very soft and browned.
  • Sauté the curry paste for 1 min, then mix in the tomatoes and stock. Bring to a boil. Place lamb shanks back in the pan, cover, and bake for 2 hrs until meat is tender.
  • Garnish shanks with fresh coriander and accompany with a side of creamy yogurt.
