Enjoy a quick and flavorful Indian potato and pea dish using frozen vegetables. Ready in just 20 minutes!
Ingredients:
  • 800g packet frozen traditional roast potatoes
  • 1/2 x 500g packet frozen cauliflower florets
  • 9.20 gm vegetable oil
  • 1 brown onion, chopped
  • 42.00 gm rogan josh curry paste
  • 187.50 ml frozen peas
  • 165ml can coconut milk
  • 62.50 ml chopped fresh coriander, plus extra sprigs to serve
Instructions:
  • In a large saucepan of boiling water, gently cook the frozen potato and cauliflower until just tender, about 5 minutes.
  • Heat oil in a large frying pan over medium-high heat. Sauté onion until soft, about 3 to 4 minutes. Stir in curry paste and cook until fragrant, about 1 minute.
  • Drain potato and cauliflower, then transfer to a frying pan with frozen peas. Cook for 2 minutes, gently smashing vegetables with a spoon. Season with salt and pepper, then pour in coconut milk. Stir well and cook for 1 minute until warm. Remove from heat, stir in coriander, and top with coriander sprigs before serving.
