"Transform ordinary baked potatoes into a vibrant and flavorful Indian-inspired tray bake!"
Ingredients:
  • 4 large Red Royale potatoes, cut into 3cm pieces
  • 1 red onion, cut into wedges
  • 2 tsp finely grated ginger
  • 2 garlic cloves, crushed
  • 1 long green chilli, seeded, finely chopped (optional)
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cardamom
  • 2 sprigs curry leaves
  • 120g pea
  • 120g Perino tomatoes, finely chopped
  • 1 Lebanese cucumber, coarsely grated
  • 280g yoghurt
  • 62.50 ml finely chopped mint
Instructions:
  • Preheat the oven to 200°C. Line a baking tray with baking paper. In a bowl, combine potato, onion, ginger, garlic, chilli (if using), garam masala, turmeric, cumin, coriander, cardamom, curry leaves, and oil. Season with salt and pepper, then toss everything together. Spread the mixture in a single layer on the lined tray. Roast, turning occasionally, for 35 minutes or until the potato is golden brown and tender. Add peas, then roast for an additional 2 minutes until heated through.
  • Squeeze excess liquid from cucumber using your hands, then mix it in a bowl with yogurt, mint, and season.
  • Layer half of the refreshing raita over the flavorful potato mixture and then generously sprinkle with the fresh tomato. Serve promptly with the rest of the tangy raita on the side.
