Indulgent make-ahead creamy dessert, ideal for elegant gatherings.
Ingredients:
  • Melted butter, to grease
  • 480g (2 cups) fresh ricotta
  • 110g (1/2 cup) caster sugar
  • 60ml (1/4 cup) thickened cream
Instructions:
  • Preheat the oven to 180°C. Grease a 10 x 17cm rectangular cake pan with melted butter and line the base with non-stick baking paper.
  • Combine ricotta, sugar, cream, eggs, and vanilla extract in a food processor until smooth. Transfer mixture to prepared pan and level the surface with a spoon.
  • Bake in a hot oven for 1 hour or until golden brown and set.
  • Take out of the oven and let cool for 30 minutes. Cover lightly with plastic wrap and refrigerate for 3 hours, or until set.
