Cheesy baked vegetable rice pilaf, a simple and delicious side dish.
Ingredients:
  • 1.5 cups boiling chicken broth
  • 0.75 cup long-grain white rice
  • 0.25 cup frozen corn
  • 0.25 cup frozen peas
  • 0.25 cup chopped carrot
  • 1 tablespoon minced onion, or to taste
  • 0.5 cup shredded Cheddar cheese, or to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Combine the chicken broth, rice, corn, peas, carrot, and onion in a casserole dish, then cover with aluminum foil.
  • Bake in the preheated oven until the rice is tender and the broth has been absorbed, around 30 minutes. Remove the foil and sprinkle the pilaf with Cheddar cheese. Cover again with foil and bake for an additional 5 minutes until the cheese is melted.
