Impressive whole baked red snapper with citrus, herbs, and garlic - perfect for a quick weeknight meal.
Ingredients:
  • 1 (2 pound) whole red snapper
  • 2 tablespoons grapeseed oil
  • 1 teaspoon Cajun seasoning, or to taste
  • 2 garlic cloves
  • 1 slice orange
  • 1 slice lime
  • 1 slice lemon
  • 2 sprigs fresh thyme
Instructions:
  • Heat the oven to 450°F (230°C).
  • Rinse the red snapper thoroughly inside and out with cold running water. Gently dry with paper towels and lay it on a baking sheet.
  • Coat fish generously with grapeseed oil, ensuring it covers inside and out. Season all sides liberally with Cajun seasoning. Fill cavity with garlic cloves, citrus slices, and sprigs of thyme.
  • Cook in the preheated oven until the fish easily flakes with a fork, approximately 20 minutes, adjusting for the size of the fish.
