Transform zucchini into delicious appetizers with Sandra Lee's recipe.
Ingredients:
  • 2 tablespoons yellow cornmeal
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
  • 3 medium zucchini, cut into 3x1/4-inch strips
  • Marinara sauce, heated, if desired
Instructions:
  • Preheat oven to a high temperature of 475°F and prepare a cookie sheet by spraying with nonstick cooking spray or lining with parchment paper.
  • Mix together Bisquick, cornmeal, salt, pepper, and Italian seasoning in a small bowl.
  • Beat the egg in a separate bowl. Coat zucchini slices in the egg mixture, then in the Bisquick mixture. Arrange on the prepared cookie sheet and spray with nonstick cooking spray.
  • Preheat oven to 475°F. Bake zucchini sticks for 5 minutes. Remove from oven, flip, and lightly spray with nonstick cooking spray. Bake for another 5 minutes or until golden brown. Serve with marinara sauce for dipping.
