Fluffy, delicious vegan pancakes - top with your favorite toppings!
Ingredients:
  • 1 cup all-purpose flour
  • 0.25 cup wheat germ
  • 2 tablespoons soy flour
  • 1 tablespoon white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1.5 cups soy milk
  • 1 tablespoon vegetable oil
Instructions:
  • In a medium bowl, mix together flour, wheat germ, soy flour, sugar, baking powder, and salt. Stir in soy milk and oil until batter is smooth.
  • Preheat a nonstick pan over medium heat. Ladle batter into 5-inch circles. Check underside for a golden brown color and flip when edges are dry, about 2 minutes. Cook the other side until golden brown, approximately 1 minute. Continue with remaining batter.
