Baklava with honey syrup

Easily create exquisite Middle Eastern pastries with this simple recipe.
Ingredients:
  • 112.50 gm sesame seeds
  • 400g walnut
  • 32.50 gm ground cinnamon
  • 8 sheets filo pastry
  • 100g butter, melted
  • 1 small lemon
  • 450.00 gm white sugar
  • 178.75 gm honey
  • 1 cinnamon stick
  • 6 whole cloves
Instructions:
  • Preheat your oven to 200°C and lightly grease a shallow baking tray.
  • Toast sesame seeds in a non-stick pan over medium heat until golden and fragrant, about 3 to 5 minutes. Transfer to a bowl and mix in walnuts and cinnamon until combined.
  • Brush one sheet of pastry with decadent butter, then elegantly fold it in half horizontally to create a delectable rectangle.
  • Evenly scatter 1/4 cup walnut mixture over pastry. Roll the pastry into a log starting from one long end. Brush with butter and place on a baking tray. Repeat with remaining pastry, butter, and walnut mixture. Bake baklava for 10 to 12 minutes until golden. Let cool on baking tray.
  • For the honey syrup: Peel a large strip of lemon rind, making sure to remove the pith. Juice half of the lemon and place the lemon rind, lemon juice, sugar, honey, cinnamon stick, cloves, and 2 cups of water in a small saucepan over medium heat. Cook and stir for 5 minutes until the sugar dissolves. Increase the heat, bring to a boil, then simmer for 10 minutes until the syrup slightly thickens.
  • Drizzle warm honey syrup over chilled baklava. Allow it to soak for 30 minutes or until the baklava is infused with the syrup. Cut each piece diagonally into thirds and serve.
