Picnic-perfect pea salad with toasted almonds, green onions, feta or Cheddar cheese, and creamy balsamic dressing. Chill overnight for optimal flavor.
Ingredients:
  • 1 (16 ounce) package frozen green peas
  • 0.5 cup chopped almonds
  • 0.5 cup chopped green onions
  • 0.5 cup crumbled feta cheese
  • 0.75 cup mayonnaise
  • 2 tablespoons balsamic vinegar
  • black pepper to taste
Instructions:
  • Thaw peas by running warm water over them in a colander, then transfer to a large bowl.
  • Toast almonds in a skillet over medium heat, then mix them with peas.
  • Combine the onions, creamy feta cheese, and rich mayonnaise in a bowl. Add a splash of balsamic vinegar, sprinkle with freshly ground pepper, cover, and chill in the refrigerator.
