Colorful bell peppers, onion, crumbled bacon, and black-eyed peas marinated in a tangy balsamic cumin dressing.
Ingredients:
  • 4 (15 ounce) cans black-eyed peas, rinsed and drained
  • 1 red bell pepper, finely chopped
  • 1 yellow bell pepper, finely chopped
  • 0.5 onion, finely chopped
  • 2 jalapeno chiles, seeded and finely chopped
  • 2 tablespoons chopped fresh parsley
  • 0.5 cup red wine vinegar
  • 2 tablespoons balsamic vinegar
  • 0.25 cup olive oil
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 4 slices cooked bacon, crumbled
Instructions:
  • Combine black-eyed peas, bell peppers, onion, jalapeño chiles, parsley, and garlic in a spacious bowl.
  • In a small bowl, combine red wine vinegar and balsamic vinegar. Slowly drizzle in olive oil while whisking continuously until well mixed. Add salt, black pepper, and cumin to the dressing and mix well.
  • Drizzle the dressing over the veggies, tossing until they're all evenly coated. Chill in the fridge for 3 to 4 hours. Right before serving, mix in the bacon until it's well combined.
