Catfish marinated in blackened fish seasoning and mayo, cooked in butter, then baked in creamy shrimp sauce. Deliciously bold flavors!
Ingredients:
  • 1.5 pounds catfish fillets, cut in strips
  • 2 teaspoons Cajun-style blackened seasoning
  • 4 tablespoons mayonnaise
  • 0.5 cup butter
  • 1 cup sliced fresh mushrooms
  • 0.5 cup chopped fresh parsley
  • 1 cup sliced green onions
  • 1 pound small, peeled shrimp
  • 2 (10.75 ounce) cans condensed cream of shrimp soup
Instructions:
  • Coat catfish strips generously with zesty blackened fish seasoning, then slather with creamy mayonnaise. Transfer to a shallow dish, cover, and chill in the refrigerator for 1 hour to lock in all the flavors.
  • Heat 4 tablespoons of butter in a large skillet until it sizzles. Sear the fish strips until golden on both sides. Place fish in a 9x13 inch baking dish in a single layer.
  • In the same skillet, melt the remaining 4 tablespoons of butter over medium heat. Sauté the mushrooms until golden, then add parsley, green onions, and shrimp. Cook on low heat until shrimp are pink and tender. Stir in cream of shrimp soup until well combined. Pour this flavorful mixture over the fish in the baking dish.
  • Preheat your oven to 375 degrees F (190 degrees C and bake for 30 minutes.
