Cajun Catfish Sandwiches

Elevate your family's dinner with a flaky and wholesome twist on classic French fish.
Ingredients:
  • 1 cup cornflake crumbs
  • 1 tablespoon Cajun seasoning
  • 1/4 cup fat-free (skim) milk
  • 4 catfish fillets (4 oz each)
  • 1 1/2 cups coleslaw mix (shredded cabbage and carrots)
  • 3 tablespoons fat-free coleslaw dressing
  • 4 whole-grain hamburger buns
  • 1 lemon, cut into 4 wedges
Instructions:
  • Preheat oven to 425°F and prepare a cookie sheet by lining it with foil and spraying it with cooking spray.
  • Combine cornflake crumbs and Cajun seasoning in one dish and pour milk into another dish.
  • Coat catfish fillets in milk, then cover in cornflake mixture before laying on foil.
  • Bake for 10 minutes, then flip the fish and continue baking for an additional 10-15 minutes, or until the fish easily flakes with a fork.
  • In a small bowl, toss together coleslaw mix and dressing. Layer catfish in buns, drizzle with lemon juice, and pile each fillet with 1/4 cup of coleslaw.
