Spicy Cajun catfish fillets, pan-seared to perfection in a sizzling cast-iron skillet. Fast, simple, and delicious.
Ingredients:
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 4 (4 ounce) catfish fillets, skinned
  • 0.75 cup unsalted butter
Instructions:
  • Combine salt, black pepper, cayenne pepper, garlic powder, onion powder, paprika, parsley, oregano, and thyme in a shallow bowl and mix well. Coat catfish fillets evenly with the spice mixture by pressing them into it.
  • Melt butter in a bowl, ready to use later.
  • Set up a butane burner or gas grill side burner outdoors. Ignite the burner and place a large cast-iron skillet on it over high heat. Add 1/4 cup of melted butter to the skillet.
  • Once the butter in the smoking hot skillet, gently place the catfish fillets. Cook for approximately 3 minutes on each side until the spices are charred onto the fillets, and the catfish is cooked through and flaky. Be cautious not to inhale the smoke.
  • Drizzle the remaining 1/2 cup of butter over the catfish just before serving.
