Redfish seared in butter, coated in spicy seasoning, and baked with Italian dressing. Deliciously flaky.
Ingredients:
  • 0.25 cup butter, melted and cooled
  • 1 teaspoon cayenne pepper
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon lemon-pepper seasoning
  • 4 (4 ounce) fillets red drum
  • 1.25 cups Italian-style salad dressing
Instructions:
  • Prep your ingredients and preheat the oven to 350°F (175°C).
  • Pour the melted butter into a shallow bowl. Combine cayenne pepper, black pepper, lemon-pepper seasoning, garlic powder, and salt in a small bowl. Dip fillets into the butter, then coat both sides with the seasoning mixture.
  • Preheat a large skillet over high heat. Place the fish in the skillet and sear each side for about 2 minutes until slightly charred.
  • Place the fillets in an 11x7-inch baking dish and generously drizzle with Italian dressing.
  • Bake the fish in the preheated oven until it easily flakes with a fork, for about 30 minutes.
