Quick and easy Cajun blackened chicken recipe - flavorful spice rub, seared to perfection in minutes.
Ingredients:
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon dried thyme
  • 0.125 teaspoon onion powder
  • 0.125 teaspoon ground white pepper
  • 0.125 teaspoon salt
  • 2 skinless, boneless chicken breast halves
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly coat a baking sheet with cooking spray.
  • Preheat a smoking hot cast iron skillet over high heat for 3 to 5 minutes.
  • As the skillet heats up, combine paprika, cayenne, cumin, thyme, onion powder, white pepper, and salt in a small bowl. Coat both sides of the chicken breasts with cooking spray and then evenly cover them with the spice mixture.
  • Sear chicken in the hot pan for 1 minute on each side, then move to the baking sheet.
  • Cook the chicken in the preheated oven until it is no longer pink in the center and the juices run clear, which should take about 5 to 10 minutes. Use an instant-read thermometer to ensure the internal temperature reaches at least 165 degrees F (74 degrees C).
