Gourmet pizza with scratch-made Alfredo sauce, blackened chicken on a homemade crust.
Ingredients:
  • 1 cup warm water
  • 1 tablespoon white sugar
  • 1 (.25 ounce) package active dry yeast
  • 2 tablespoons vegetable oil
  • 6 slices bacon
  • 6 tablespoons butter
  • 1.5 cups heavy cream
  • 2 egg yolks
  • 0.5 cup freshly grated Parmesan cheese
  • 0.5 cup freshly grated Romano cheese
  • 0.125 teaspoon ground nutmeg
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon crumbled dried thyme
  • 0.125 teaspoon ground white pepper
  • 0.125 teaspoon onion powder
  • 2 skinless, boneless chicken breast halves
  • 1 tablespoon vegetable oil
  • 1 cup shredded mozzarella cheese, or more if desired
  • 0.5 cup baby spinach leaves
  • 3 tablespoons freshly grated Parmesan cheese
  • 1 roma (plum) tomato, diced
Instructions:
  • Combine water, sugar, yeast, and 2 tablespoons of vegetable oil in a large stand mixer with a dough hook. Mix on low speed briefly. Add flour and salt. Mix on low until fully incorporated, then knead on medium-low for 10-12 minutes until dough is springy and smooth. Dust with flour if needed to prevent sticking.
  • Shape dough into a ball and transfer to an oiled bowl, gently coat the dough surface with oil. Cover with a towel, let rise in a warm spot until doubled, 30 minutes to 1 hour.
  • Fry the bacon in a large skillet over medium-high heat until crispy, around 10 minutes. Transfer to a paper towel to absorb excess grease, let it cool, then chop it up and set aside.
  • 1. In a saucepan over medium-low heat, melt butter. Add garlic and sauté until fragrant, about 1 minute. 2. Pour in cream and whisk in egg yolks until smooth. 3. Mix in 1/2 cup Parmesan cheese, Romano cheese, and nutmeg. Season with salt to taste. 4. Gently simmer the sauce until cheeses are melted and mixture thickens, about 3 to 5 minutes. 5. Remove from heat and set aside.
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Combine paprika, cayenne pepper, cumin, thyme, 1/8 teaspoon of salt, white pepper, and onion powder in a bowl. Rub spice mixture on one side of each chicken breast. Heat 1 tablespoon of vegetable oil in a skillet over high heat. Sear chicken breasts, seasoned sides down, in hot oil until spices are darkened, about 1 minute each side. Transfer to a baking sheet.
  • Roast the chicken breasts in the oven until cooked through and reach an internal temperature of at least 160 degrees F (70 degrees C), about 5 to 10 minutes. Let them rest.
  • Gently deflate pizza dough, then transfer it to a floured surface. Shape the crust on a pizza stone or baking sheet and prick it with a fork to release steam.
  • Place the crust in the oven and bake until lightly cooked on top, for 5 to 7 minutes. Once done, take it out of the oven and evenly spread Alfredo sauce on the crust. Follow with an even layer of mozzarella cheese, slices of blackened chicken breasts, spinach leaves, chopped bacon, and finally, sprinkle 3 tablespoons of Parmesan cheese on top.
  • Place the pizza back in the oven and bake for 15 to 20 minutes, or until the mozzarella cheese is golden brown and bubbly. Just before serving, top the pizza with chopped Roma tomatoes for a fresh finish.
