Balsamic pork tray bake recipe

Flavorful balsamic pork chops with potatoes and juicy tomatoes in one easy tray bake.
Ingredients:
  • 36.40 gm olive oil
  • 4 pork loin chops
  • 500g baby new (chat) potatoes, quartered
  • 2 red onions, cut into thin wedges
  • 6 garlic cloves, unpeeled
  • 6 fresh thyme sprigs
  • 62.50 ml balsamic vinegar
  • 8.00 gm brown sugar
  • 250g cherry truss tomatoes, cut from vine
  • 62.50 ml small fresh basil leaves
Instructions:
  • Preheat your oven to a piping hot 220C (200C fan-forced).
  • In a large flameproof baking dish, heat oil over medium-high heat. Add pork and sear for 1 to 2 minutes on each side until beautifully browned. Transfer to a plate and set aside.
  • Combine potatoes, onion, garlic, and thyme in a dish. Cook undisturbed for 4 to 5 minutes until potatoes are browned. Remove from heat. Whisk vinegar and sugar until sugar dissolves. Pour over potato mixture. Season with salt and pepper. Toss to coat. Bake for 25 minutes.
  • Place the pork, along with any juices and tomatoes, in the dish. Bake for 8 to 10 minutes, or until the pork is cooked through. Serve with a sprinkle of fresh basil.
