Savor this mouthwatering spinach and mushroom side, marinated in balsamic, olive oil, lemon, and garlic - a perfect match for any Italian entrée.
Ingredients:
  • 8 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon zest
  • 0.5 lemon, juiced
  • 3 cloves garlic, minced
  • 12 baby bella mushrooms, sliced
  • 2 tablespoons unsalted butter
  • 1 (6 ounce) bag baby spinach
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
Instructions:
  • Combine olive oil, balsamic, lemon zest, juice, and garlic in a large bowl. Add sliced mushrooms and let marinate for at least 1 hour.
  • In a skillet, melt butter over medium-low heat until browned and fragrant, stirring frequently for 5 to 8 minutes. Add drained mushrooms (reserving marinade) and cook until starting to soften, about 2 to 3 minutes. Stir in spinach and 2 tablespoons of marinade, then saute over medium-low heat for 20 minutes. Season with salt and pepper to taste.
