Juicy lamb paired with flavorful broad beans, perfect for a diabetes-friendly feast.
Ingredients:
  • 12 (about 780g) lamb cutlets, excess fat trimmed
  • 40.00 ml balsamic vinegar
  • 1 red onion, sliced into rings
  • 300g fresh broad beans, shelled
  • 82.50 ml firmly packed fresh continental parsley leaves
  • Salt & freshly ground black pepper
Instructions:
  • Preheat the grill to high heat. Brush the lamb with vinegar and place it on a baking tray. Allow it to rest for 5 minutes to enhance the flavors. Grill the lamb for 5 minutes on each side for a medium doneness, or longer based on your preference.
  • In a non-stick frying pan, heat oil over medium-high heat. Cook onion, stirring, for 5 minutes until browned. Reduce heat to medium.
  • Steam the broad beans for 3 minutes until tender. Add them to the pan with the cooked onion and stir for 2 minutes. Remove from heat, mix in parsley, and season with salt and pepper.
  • Plate the flavorful bean mixture evenly among plates and generously top each with the succulent cutlets. Serve promptly for a delightful dining experience.
