Tangy balsamic-glazed red onions complement any meal - perfect for chicken, Thanksgiving, or as a veggie main.
Ingredients:
  • For the onions
  • 4 medium red onions (1 1/2 to 2 pounds total)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar (See our Guide to Balsamic Vinegar )
  • 1 tablespoon plus 1 teaspoon chopped fresh oregano
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • For the glaze
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
Instructions:
  • Preheat the oven to 400F. Trim off any straggly roots, leaving the firm root centers. Slice the onions in half from tip to root, peel off the skins, and cut each half into 4 wedges, keeping them intact by cutting through the root.
  • Arrange onions tightly in baking dish: Arrange the onions snugly in a 1 to 1 1/2 quart baking dish (9-inch round or oval, 8-inch square). Sprinkle evenly with olive oil, balsamic vinegar, 1 tablespoon of oregano, salt, and pepper. Avoid stirring to maintain the beautiful presentation.
  • Roast the onions in a covered baking dish for 30 minutes, then uncover and roast for an additional 30 minutes.
  • Prepare the glaze by whisking together balsamic vinegar, mustard, salt, and pepper in a bowl. Slowly drizzle in the olive oil while continuing to whisk.
  • Drizzle the glaze over the roasted onions and bake for an additional 10 minutes, or until the onions are tender when pierced with a knife.
  • Enhance the flavor by sprinkling the onions with the remaining teaspoon of oregano just before serving.
