Simplify and savor Balti lamb curry with just 6 ingredients in one pot! Easy and delicious.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 medium brown onion, thinly sliced
  • 56.00 gm balti curry paste
  • 750g diced lamb
  • 400g can diced tomatoes
  • 400g can chickpeas, drained, rinsed
  • 12 small pappadums
Instructions:
  • In a medium saucepan over medium heat, warm oil. Add onion and cook, stirring until softened, about 5 minutes. Stir in curry paste and cook for another minute until fragrant.
  • Place tender lamb into a hot pan and cook it, stirring occasionally, until the meat is coated and slightly browned. Introduce diced tomato and 1/2 cup of cold water, let it come to a boil, then lower the heat and simmer it covered for 1 hour until the lamb is almost tender. Add chickpeas and continue cooking uncovered for 30 minutes until the sauce thickens and the lamb reaches the desired tenderness.
  • Cook the pappadums according to the packet instructions, then serve them with the curry.
