Indulge in the irresistible combo of banana and coconut in this delectable cream pie fusion.
Ingredients:
  • 1.3333333730698 cups water
  • 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
  • 3 large egg yolks, beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 0.5 cup flaked coconut, toasted*
  • 2 medium bananas
  • Lemon juice
  • 1 (6 ounce) prepared graham cracker pie crust
  • Heavy cream, whipped
Instructions:
  • In a heavy saucepan, mix cornstarch with water until dissolved. Stir in sweetened condensed milk and egg yolks until thickened and bubbly. Take off the heat and mix in butter and vanilla. Let it cool a bit before gently folding in the coconut.
  • Slice ripe bananas and delicately coat them in fresh lemon juice before arranging them in a single layer at the base of the pie crust. Carefully pour the luscious filling over the bananas.
  • Refrigerate pie for 4 hours until firm. Serve with a dollop of whipped cream and decorations of toasted coconut and sliced bananas as desired.
