Banana-Coconut Cream Dessert

Quick and delicious banana cream pie-inspired dessert recipe from Betty Crocker Bisquick II Cookbook. Yum!
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 2 tablespoons sugar
  • 1/4 cup firm butter or margarine
  • 1 package (4-serving size) vanilla instant pudding and pie filling mix
  • 1 3/4 cups milk
  • 2 medium bananas, sliced
  • 2 cups whipped cream
  • 1/2 cup toasted shredded coconut
Instructions:
  • Preheat oven to 375°F. Combine Bisquick mix and sugar in a medium bowl. Incorporate butter using a pastry blender or two knives until mixture is crumbly. Press mixture into the bottom of an ungreased 9x9x2 inch square pan.
  • Bake until golden brown, approximately 15 minutes. Allow to cool fully for about 30 minutes.
  • Prepare pudding according to package instructions using 1 3/4 cups of milk, then spread it over the crust. Add a layer of banana slices, followed by a generous layer of whipped cream and a sprinkle of coconut. Refrigerate covered for at least 1 hour, but no more than 24 hours before serving.
