Indulge in a decadent tropical banana coconut bread with walnuts, almond, and maraschino cherries, easily customizable with pineapple or lemon zest for a refreshing twist.
Ingredients:
  • 2 eggs
  • 1 cup white sugar
  • 0.5 cup butter, melted
  • 1 cup mashed bananas
  • 0.5 teaspoon almond extract
  • 1.5 cups all-purpose flour
  • 0.5 cup flaked coconut
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup chopped walnuts
  • 0.5 cup maraschino cherries, chopped
Instructions:
  • Combine flour, coconut, baking powder, baking soda, salt, chopped walnuts, and cherries in a mixing bowl.
  • In a mixing bowl, crack the eggs and beat until they are light and frothy. Mix in the sugar and melted butter or margarine until well-combined. Stir in the mashed banana and flavoring. Gently fold in the flour mixture until just combined. Transfer the batter into a greased 9x5x3 inch loaf pan.
  • Bake at 350 degrees F for 1 hour or until a toothpick comes out clean in the center. Allow it to rest for 10 minutes, then remove from the pan and let it cool.
