Kids will love making these delicious and simple banana raspberry pikelets.
Ingredients:
  • 150.00 gm self-raising flour
  • 4.00 gm baking powder
  • 20.00 gm caster sugar
  • 193.13 gm milk
  • 1 egg, lightly beaten
  • 2 large bananas, mashed (see note)
  • Olive oil cooking spray
  • 250.00 ml frozen raspberries
Instructions:
  • Gently sift flour and baking powder into a bowl, then stir in the sugar, creating a well in the center.
  • In a bowl, whisk together milk and egg. Mix in banana, then add the mixture to the well. Stir with a wooden spoon until combined.
  • Gently coat a non-stick frying pan with oil spray and heat over medium heat. Pour 1 tablespoon of batter for each pikelet, cooking in batches for about 1 minute until just set. Place 3 raspberries on each pikelet, cook until bubbles form, then carefully flip and cook for 1 to 2 minutes until golden and cooked through. Transfer to a wire rack to cool before serving. Repeat with remaining batter and raspberries to make 20 pikelets.
